HYPERLOCAL PRODUCE
We believe the farm to table boom is more of a return to America's culinary roots than a journey into bold new territory. We've been sourcing produce from local farms since the days of the Thornapple Village Inn in the late '70s. It just seemed like the right thing to do. We began growing our own produce and botanicals in 2002 at Blue Water. In the years that followed we installed Michigan's largest live wall at The B.O.B. and have installed several smaller live walls and gardens at most of our restaurants. The live wall at The B.O.B. has since been slightly scaled down and reconfigured to encase the Sky Deck, allowing guests to enjoy the greenery and flowers while dining outside in warm weather months. Currently, we have a rotating array of over 40 botanicals and 20 floral varities growing in gardens and live walls at our restaurants. This allows our chefs and mixologists to work with great flexibility and creativity when creating fresh food and beverage for our guests to enjoy. Plus–we just love gardening!
